It can be considered the quintessential native grape variety of Friuli Venezia Giulia. It is the oldest, boasting over 700 years of history. Ribolla owes the origin of its name to a distinctive characteristic: in the past, the high malic acid content of its musts caused the wine to begin to “re-boil” after primary fermentation had finished, due to secondary “malolactic” fermentation.

Tasting notes
Its color is straw yellow with slight greenish reflections. On the nose it is fresh and delicate, complex and refined. It is floral, reminiscent of wildflowers, fruity, with hints of plum and green apple along with citrus notes, slightly vegetal with hints of green tea, and mineral. On the palate it is pleasantly acidic and light; the sensations perceived on the nose are confirmed. It is savory and shows a pronounced minerality. The finish is long and persistent.
Pairings
Its freshness and drinkability make it excellent as an aperitif. It pairs well with battered vegetables, flans, vegetarian dishes, soups—especially creamy asparagus or mushroom soups—as well as dishes based on raw fish and shellfish.
