It has been possible to trace the origin of Chardonnay through the analysis of microsatellite markers in nuclear DNA. This grape variety certainly derives from the cross between Pinot Noir and Gouais Blanc. Its remote origin is Dalmatia, from where it was brought to France by Roman legions led by Probus. The Chardonnay grape found its preferred home in Burgundy, Bordeaux, and Champagne. Its introduction to Italy (Trentino) was due to the Agricultural Institute of San Michele, after which it spread to some areas of Friuli.

Tasting notes
It is the most international of wines due to its pleasantness and its wide range of pairings. Thanks to its freshness, it pairs perfectly with fish-based appetizers, soups, risottos, pasta dishes, and vegetable-based main courses, especially if they include fish, even when accompanied by creamy sauces. It should absolutely not be paired with foods featuring tomato-based sauces, as the acidity of the tomato contrasts too strongly with the buttery character of Chardonnay.
