Pinot Noir, which among all red grape varieties in the world is considered the most noble and elegant, is one of the oldest grapes for which historical records exist. Its land of origin is Burgundy, where it is believed to have been cultivated for over 2,000 years—therefore even before the Roman invasions. In Italy, and more precisely in Alto Adige, the variety was first described in 1838; a few decades later it arrived in Friuli Venezia Giulia. The term “Pinot” derives from the French word “Pin”, meaning “pine.” The bunch is in fact small and compact, with berries that have a thin and delicate skin and are very close to each other. Altogether, they resemble a pine cone. This characteristic is common to the entire Pinot family.

Tasting notes
With its ruby red color and garnet reflections, Pinot Noir is the quintessence of elegance and finesse. The bouquet is very delicate, enveloping, balsamic, and expresses remarkable complexity. On the palate it is refined, with elegant tannins, confirming the same aromas perceived on the nose, though they become more clearly identifiable. It reveals a Mediterranean character with notes of black pepper, myrtle, wild strawberry, currant, a floral hint of violet, and leaves a light and pleasant vanilla finish. It is very persistent and offers the satisfying freshness and minerality typical of our region.
Pairings
It pairs excellently with roasted white meats, but also with fish fillets. Its strength lies in how easily it can cut through fats and create harmony with many dishes without overpowering more delicate flavors. One recommendation: choose dishes that are not too elaborate or rich, and avoid spicy foods, which would overwhelm its elegant charm.
