Tasting notes
In appearance, it has a more or less intense ruby red color, slightly garnet when aged. It has good aromatic intensity, sometimes with a vinous hint; Merlot offers notes of dark-fleshed fruit such as plums, blackberries and blueberries, as well as currants and sour cherries. The taste profile of Merlot is defined by its softness, a roundness given by tannins that are not particularly aggressive. It is a wine of good smoothness—pure, deep, soft, and pleasant.
Pairings
Merlot is a wine with great versatility: when young and low in alcohol, it can be enjoyed throughout a meal, paired with first courses (risottos or pasta) with meat ragù; or with red and white meats (pork, veal, rabbit, and poultry), as well as dishes based on game and mushrooms (such as porcini), or medium-aged cheeses.
