Tasting notes
Merlot is rich in soft tannins, with a smooth and rounded taste. In the blend, its role is to provide softness. It offers aromas of ripe dark-fleshed fruits such as plums, currants, black cherry, and floral notes like violet. Refosco dal Peduncolo Rosso, with its violet hue, fresh acidity, and aromas of wild blackberry, blackcurrant, and plum, is a fundamental component because it adds color, body, and structure to the fragrant softness of the Merlot. Cabernet Sauvignon is also important, contributing its elegant blueberry notes. These are structured wines, suitable for aging in new tonneaux for 22 months, allowing their astringency and tannins to soften without imparting overpowering oak aromas. As a result, they retain their fruity character, enriched with notes of vanilla, licorice, tobacco, and cocoa. In the final blend, they integrate perfectly, resulting in an elegant, aristocratic wine with excellent aging potential.
Pairings
Primo Rosso is a wine particularly suited to accompany main courses based on meat, such as grilled steaks, roasts, and even spiced casserole dishes. It is also an excellent meditation wine.
