Tasting notes
Visually, it presents an intense straw-yellow color. On the nose, it reveals a wide range of delicate yet persistent aromas: buttery notes, hints of apple, acacia flowers, and fresh bread crust. In the finish, toasted and vanilla notes can be perceived. On the palate, it is fresh, mineral, and savory. All the aromas perceived on the nose are confirmed in the tasting, giving a velvety, soft, rounded, and full sensation. Very persistent, with a sweet vanilla finish imparted by the small percentage of wine aged in wooden barrels.
Pairings
It is the most international of wines due to its pleasantness and wide versatility in food pairings. Thanks to its freshness, it pairs perfectly with appetizers, especially those based on fish. For first courses, it is recommended with vegetable-based soups, even more so if they include fish, such as zucchini or chickpea cream soup with prawns, fish soup, fish couscous, seafood risotto, artichoke risotto, and pasta with vegetables. For main courses, thanks to its palate-cleansing quality, it pairs well with fish, chicken, or pork dishes, especially when accompanied by cream-based sauces. It should absolutely not be paired with tomato-based sauces, as the sharp acidity of tomato contrasts too strongly with the buttery character of Chardonnay.
