Tasting notes
In appearance, it shows a very intense straw-yellow color with golden reflections. On the nose, it is highly complex: at first impact, it envelops you with citrus notes, dried fruit, candied fruit, dates, nuts, honey and ripe flowers, aromatic herbs, spices, anise, vanilla, exotic woods, mineral, balsamic and toasted hints. On the palate, it is velvety, soft, round, “explosive,” and well-structured, confirming the aromatic profile. Its balance is marked by a pleasant acidity and a fresh, persistent savoriness. The wood of the tonneau does not overpower but rather refines this wine, which, like the champion it is, presents itself as a true “Number One.”
Pairings
It is an excellent aperitif. Its structure and natural softness make it particularly suitable for challenging pairings with slightly bitter tendencies, such as flans and risottos with artichokes or truffle, liver-based dishes, strongly flavored and blue cheeses, shellfish, almond or walnut cake, and cantucci. It also lends itself well as a meditation wine during a pleasant conversation.
