It can be considered the quintessential native grape variety of Friuli Venezia Giulia. It is the oldest, boasting over 700 years of history. Ribolla owes the origin of its name to a distinctive characteristic: in the past, the high malic acid content of its musts caused the wine to “reboil” after primary fermentation had finished, due to secondary “malolactic” fermentation.
The color is straw yellow with slight greenish reflections. On the nose, it is fresh and delicate, complex, and refined. It is floral, reminiscent of wildflowers, fruity, with hints of plum and green apple and citrus notes, slightly vegetal with hints of green tea, and mineral. On the palate, it is pleasantly acidic and light; the sensations perceived on the nose are recognizable, it is savory and shows a marked minerality. The finish is long and persistent.
Pairings
Its freshness and drinkability make it excellent as an aperitif. It pairs well with battered vegetables, baked dishes, vegetarian dishes, soups—especially creamy asparagus or mushroom soups—and dishes based on raw fish and shellfish.
