Obtained from selected Chardonnay grapes, which already in the vineyard showed distinctive organoleptic characteristics and perfect balance. The grapes are pressed by selecting only the free-run must, after which fermentation proceeds at a controlled temperature. At the end of fermentation, the wine is left to mature on its lees until spring, then it undergoes a secondary fermentation in autoclaves at 14°C for at least 3 months.
Fruity and floral notes with hints of warm bread crust
Tasting notes
It has a persistent foam and a fine, continuous perlage. On the nose, there are fruity notes (Golden apple, pear, white-fleshed peach), floral notes (blooming wisteria and acacia), and hints of warm bread crust. On the palate, although it has a good structure, it remains soft, velvety, lively, slightly aromatic, with good minerality.
Pairings
Particularly suitable for aperitifs in general. Excellent when paired with fish starters or cured meats, with first courses such as vegetable soups, and with main courses like baked fish dishes. It is especially well suited for a full meal pairing based on fish.
